Sautéed Yellow Squash with Fresh Herbs

Sautéed Yellow Squash with Fresh Herbs

Ingredients

  • 1 tablespoon extra-virgin olive oil

  • 2 medium yellow squash, sliced crosswise 1/4-inch thick

  • 1 tablespoon chopped fresh parsley

  • 1 tablespoon chopped fresh mint

  • 1 tablespoon chopped fresh thyme

  • Kosher salt

  • Black pepper

Directions

  1. In a large skillet, heat the oil over moderately high heat. Add the squash and sauté until browned and tender, about five minutes. Remove from heat and season with herbs, salt and pepper. Serve immediately.
