This recipe was adapted from one of my mothers old cookbook the only difference is I replaced the margarine with butter ,used whole eggs instead of the yolk."

ingredients

  • 2 1/3 cups all purpose flour
  • 3 tablespoons granulated sugar
  • 1 packet (1/4 ounce) instant yeast
  • 3 tablespoons unsalted butter, room temperature
  • 1/2 cup lukewarm water
  • 1/2 teaspoon salt
  • 1 large egg
  • 2 liters vegetable oil, for frying

For the Filling

ingredients

  • 1 cup strawberry jam
  • 1 cup vanilla whipped cream
  • 1 cup chocolate spread

Method

  • Step 1

    To your mixer add your 2⅓ cups of flour, 7grams of instant yeast, 1/2 tsp of salt , 3 tbsp of granulated sugar, 3 tbsp of butter ,1/2 cup of lukewarm milk and one large egg. Mix together on low speed with your dough hook until dough comes together. Knead for a further 10-15 minutes until dough is tacky.

  • Step 2

    Pick up your dough and form it into a ball. Butter a bowl and place your dough in the bowl for proofing. Cover your bowl with a clean kitchen towel and let it proof in a warm place for 1-2 hours or untill it doubles in size.

  • Step 3

    After your dough has risen punch out the air ,dust your work surface with some flour and using your rolling pin , roll out your dough to about 1/2 inch thickness,with a round cookie cutter cut out your donuts and place them on parchment paper. You can keep re-rolling and cutting out donuts till the dough is used up.

  • Step 4

    Cover donuts with a clean kitchen towel and allow them to rise for 30mins to 45mins or until they have doubled in size.

  • Step 5

    Heat 1 ½ inch of oil in a pot till about 350F/180C. If you do not have a thermometer test the oil with a tiny piece of your dough. If it starts to fry and has bubbles around it then your oil is ready. If your piece of dough turns brown too quickly, then your oil is too hot. If your dough doesn't fry then your oil is too cold.

  • Step 6

    Drop two donuts at a time into your pot of oil depending on the size of your pot to avoid over crowding,let them fry for 1-2 mins on each side which allows them to become golden brown before turning them on the other side.

  • Step 7

    Transfer them to a paper towel or rack to drain and cool down.

  • Step 8

    Roll your donuts in granulated sugar.Using your spatula fill up your piping bag with your filing of choice. Use a skewer to make a hole in your donut, and push your piping nozzle in the hole. Fill your donut with your filling till your donut feels heavy repeat with all your donuts and enjoy!
